  1. Preheat your oven to 375°F (190°C). While the oven is heating, prepare the chicken breasts by seasoning them generously with salt and pepper on both sides.
  2. In a skillet, melt the unsalted butter over medium heat.
  3. Add the fresh breadcrumbs and chopped parsley to the skillet, and sauté until the breadcrumbs are golden brown and crispy. Remove from heat and set aside.
  4. In the same skillet, heat the extra-virgin olive oil over medium-high heat.
  5. Once hot, add the chicken breasts, skin side down, and sear until golden brown, about 3-4 minutes per side.
  6. While the chicken is cooking, prepare the maple glaze by combining the pure maple syrup, sherry vinegar, chicken stock, and Dijon mustard in a small bowl. Whisk until well combined.
  7. Once the chicken breasts are seared, pour the maple glaze over them in the skillet. Make sure the chicken is well coated with the glaze.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  9. Remove the skillet from the oven and let the chicken breasts rest for a few minutes before serving.
  10. To serve, spoon any remaining maple glaze from the skillet over the chicken breasts and sprinkle with the toasted bread crumbs mixture.
